Welcome to my Summer Slimmer Challenge beverage series – it’s all about fun summery drinks to make all season long! Today we are going to make a Mai Tai Mocktail!! I love Mai Tais, they are a juicy, refreshing summer drink, and so simple to make. And since we are leaving out the alcohol, it’s a fairly healthy drink with just a few ingredients! You will need:
2 cups pineapple juice – preferable fresh pineapple juice. (Did you know that pineapple is great source of antioxidants and vitamin C?! I keep a pineapple around all summer long to snack on – so healthy and tasty!)
1 cup orange juice, preferably fresh squeezed
1 cup sparkling water
1/4 cup cream of coconut. If you want to cut down on the sugar content of this drink, you can substitute coconut cream, which has no added sugar but still offers up that delicious coconut flavor and richness.
Then simply combine all the ingredients in a pitcher, mix well, and serve! I like to garnish mine with a piece of pineapple, but you can use an orange slice too!

Hi everybody. I’m so excited to share with you. One of my favorite summer drinks, a non alcoholic Mai Tai, and it’s so good for you. All you need is pineapple juice, orange juice club soda, cream of coconut, some crushed ice, and then a little bit of a pineapple slice for garnish and it’s so easy, you just mix it all together, so pour it into a big pitcher, got the pineapple, got the orange juice, little club soda, and then a little bit of that cream of coconut and mix it all up. Oh wait til you taste it. You will love it. I’m so excited. I love a good summer drink. Yes, top it off with a little pineapple. It’s all good for us and cheers. Enjoy your summer drink!
