Summer Slimmer Challenge: Pina Colada

Denise Austin by Denise Austin | May 27, 2019 | General

Happy almost Summer everyone! Today’s Summer Slimmer Challenge beverage is a non-alcoholic Pina Colada! This one is so easy, and tastes soooo good! If you pair this with a bit of protein and fiber – say a hard boiled egg and a piece of whole-grain toast – you will have a complete breakfast! I like to keep the sugar lower on this one by using unsweetened pineapple juice and coconut milk, since pineapple is naturally sweet on it’s own. All you need is:

1 1/2 cups pineapple chunks – fresh or frozen

1 cup unsweetened pineapple juice

1 cup unsweetened coconut milk

1/4 cup ice

Place the pineapple chunks and ice in the blender – they should go in first so they get the bulk of the pulverizing. Then add the pineapple juice and coconut milk, and puree until smooth. I like to garnish with a fresh pineapple wedge – it’s such a festive and delicious drink!
