1 large tomato, stem and leaves removed

¼ medium cucumber

¼ bell pepper (green, orange, red, yellow)

Small handful of parsley

2 tablespoons extra virgin olive oil

Squeeze of lemon juice

Dash of celery salt

Salt and pepper to taste

Pairing: 1 hard-boiled egg

Instructions

  1. Blend first 5 ingredients until smooth.
  2. Add lemon, salt and pepper to taste. 
  3. Pair with a hard-boiled egg for a savory protein and veggie filled breakfast.
