So Easy Baked Chicken with Skinny Mashed Potatoes and Best Broccoli

Fresh chicken breasts are baked and served with delicious broccoli salad and mashed red potatoes.

Ingredients

2 small bone-in, skin-on chicken breasts
2 thin pats butter (about 1 tsp. each)
1/4 tsp. black pepper
1/8 tsp. seasoned salt
1 recipe Skinny Mashed Potatoes
1 recipe Best Broccoli

Instructions

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or foil.
2. Place the chicken breasts on the baking sheet. Place 1 pat butter on top of each chicken breast and sprinkle the pepper and seasoned salt evenly over the chicken.
3. Bake the chicken for about 45 minutes, or until it registers an internal temperature of 165°F. Allow the chicken to rest for 5 minutes at room temperature; remove the skin before serving. Plate 1 chicken breast with half the Skinny Mashed Potatoes and half the Best Broccoli.
