Whole grain toast topped with scrambled eggs, avocado and fresh salsa.

Ingredients

2 slices whole-grain bread (use gluten-free bread if following a gluten-free diet)
1 whole eggs (cage-free)
2 egg whites (cage-free)
1/4 ripe avocado, sliced
2 Tbsp. salsa

Instructions

1. Toast the bread.
2. Coat a small skillet with oil spray and heat over medium heat.
3. Whip together the egg and egg whites. Add the eggs to the skillet and scramble until the egg is fully cooked.
4. Layer the cooked eggs onto the toast. Top with the avocado and salsa. (Eat as a sandwich or 2 slices of open-faced toast.)
