Seafood Spinach Salad

This is a great recipe from my Stop the Clock Nutrition Plan - it is so easy to make, and has lots of good-for-you ingredients! Salmon is a great food rich in omega-3s, which can help to boost your memory; spinach is a wonderful summer ingredient that has lots of nutritional value; and the oranges offer up a boost of vitamin C!

It is elegant enough to serve to guests, but practical enough to eat on your own... your body and mind will thank you for this dish, as will your taste buds! Enjoy!

Ingredients

2 cups baby spinach leaves

1 3-ounce can salmon with bones

½ cup mandarin oranges

2 tablespoons chopped walnuts

2 tablespoons vinaigrette (store bought)

Directions

Toss together spinach, salmon, mandarin oranges, and walnuts. Dress with your favorite vinaigrette. Serve with crackers and seltzer!
