Holidays My Way: Cherished Family Recipes!

Welcome readers of my Holiday Magazine! In addition to all the wonderful recipes in the magazine, I wanted to share with you two of my favorite traditional recipes passed down from my grandmother and mother... we still make these every year, they bring back so many wonderful memories when I smell the aromas. It's part of what makes the holidays so special - traditions, memories, love and food! So here are two of my favorite recipes: Swedish Meatballs and Brownie Drops!


Swedish Meatballs

Ingredients

1/2 cup fine dry bread crumbs

1/2 cup warm light cream

1/2 pound of beef

1/4 pound veal

¼  pound pork

1/2 cup milk

2 slightly beaten egg yolks

2 tablespoons minced onion

1 tablespoon salt

1/4 teaspoon pepper

Dash of allspice

Oil for browning

For sauce:

Pat of butter

2 cups light cream

2 tablespoons flour

Instructions

  1. Soak the bread crumbs in the warm cream.
  2. Combine crumbs and meat, mix thoroughly and add milk.
  3. In a small skillet, heat 1 tablespoon of the oil over medium heat. Add the minced onion and sauté until soft and lightly golden, about 3-4 minutes. Remove from heat.
  4. Add half of the sautéed onions to the meat mixture and reserve the rest for the sauce.
  5. Stir in egg yolks and seasonings to the meat mixture.
  6. Form into tiny balls and freeze for 15-20 minutes.
  7. Heat oil in pan and brown meatballs, then remove.
  8. Add a pat of butter to the drippings in skillet.
  9. Blend in 2 tablespoons flour until smooth. Cook one minute and remove from heat.
  10. Stir in two cups light cream and cook, stirring constantly, until sauce thickens.
  11. Stir in reserved sauteed onions and the meatballs.


Brownie Drops

Makes about 36 cookies

Ingredients

2 packages of chocolate (sweet bakers German chocolate)

1 tablespoon butter

2 eggs

¾ cup sugar

1/4 cup flour

1/4 teaspoon baking powder

1/4 teaspoon cinnamon

1/8 teaspoon salt

1/2 teaspoon vanilla

Instructions

  1. Melt chocolate and butter over hot water. Stir, then cool.
  2. Beat eggs until foamy then add sugar, 2 tablespoons at a time, just until thickened.
  3. Blend in chocolate.
  4. Add flour, baking powder, cinnamon and salt. Blend, then stir in vanilla.
  5. Drop by teaspoon onto greased baking sheet.
  6. Bake at 350 until cookies feel set when touched lightly, about 8 to 10 minutes.
