How To Get More Vitamin C - Plus A Recipe!

Vitamin C is a nutrient that most people think about during the winter months to help prevent the flu and pesky winter colds. Well Vitamin C is important to get in the warmer months too! Since Vitamin C is a powerful antioxidant, it can help strengthen your body's natural defenses and could even help reduce the risk of heart disease.

I always suggest trying to get your vitamins and nutrients through foods. Not only will this encourage you to eat more whole foods, but eating a well rounded diet will keep you full longer and keep your energy levels up! Here are some of my favorite foods that contain Vitamin C to eat this time of the year:

  • Citrus Fruits - Oranges, Lemons, Grapefruits
  • Strawberries
  • Bell Pepper
  • Kiwi
  • Tomatoes

And here’s a wonderful Citrus Salad Recipe that will really kick up your Vitamin C intake! It’s fresh, delicious and so good for you!

Citrus Salad Recipe

  • 2 oranges, peeled and segmented
  • 2 grapefruits, peeled and segmented
  • 1 large red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup fresh mint leaves, chopped

Dressing:

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey (or maple syrup for vegan option)
  • Salt and pepper to taste
  1. Mix oranges, grapefruits, red bell pepper and red onion in a large bowl.
  2. Mix olive oil, lemon and lime juice and honey to make dressing. Season with salt and pepper as needed.
  3. Add fresh herbs, toss, chill and enjoy!
