I looove making this recipe for family and company - it's easy to make, healthy, and tastes delicious. What makes this recipe so tasty is the combination of smoked paprika, garlic and lime juice.... it just brings out a really bright, fresh flavor that pairs nicely with a pasta salad or quinoa for an al fresco meal. Add to it some fresh ears of corn and slices of fresh, ripe tomatoes, and you don't get more summery than this!
