Walking Challenge Recipe: Green and Fruity Smoothie

This is an easy to drink smoothie that comes together quickly to refuel you after a walk. Don’t fear the vegetables as it tastes predominantly of green apple and banana.. while still giving you the healthy benefits of all the nutrients the veggies provide! Makes 2 servings.Ingredients1/4 cup tightly packed fresh spinach1/2 green apple (3oz)1/2 cucumber (3oz)1/2 banana, frozen (3oz)1/4 cup unsweetened full fat Greek yogurt1/4 cup very cold water (substitute with 2 ice cubes if using a high speed blender)Pairing: 2 slices whole grain toast with 2 tablespoons almond butterInstructions:Blend all of the ingredients except for the pairing until smooth.
