Delicious grilled fresh halibut is served with sweet and tangy mango salsa, corn and black beans, then topped with a squeeze of fresh lime juice and cilantro.

Ingredients

2 (8 oz.) halibut fillets (or any firm white fish, such as haddock, catfish, pollock, or grouper)
2 Tbsp. olive oil, divided
1/4 tsp. black pepper
1/8 tsp. salt
1/2 cup Mango Salsa (or 1/4 cup storebought salsa)
1 cup corn kernels (fresh off the cob or frozen, thawed)
1 cup cooked black beans (if using canned, choose no-salt-added or low-sodium beans and rinse and drain well before use)
1 red bell pepper, diced
2 Tbsp. lime juice
2 Tbsp. chopped fresh cilantro
1/2 tsp. chili powder

Instructions

1. Preheat the grill or an indoor grill pan over medium-high heat.
2. Rub the halibut with 1 Tbsp. oil. Sprinkle with the pepper and salt.
3. Grill the halibut for 2 to 3 minutes per side, or until the center is opaque.
4. Transfer the halibut to 2 plates and top each portion with 1/4 cup Mango Salsa.
5. In a medium bowl, combine the corn, beans, bell pepper, remaining 1 Tbsp. oil, lime juice, cilantro, and chili powder. Divide the salad evenly between the 2 plates.
