Italian Tuna and White Bean Salad

Tuna fish is tossed in Denise's Favorite Dressing with tomatoes, beans and onions then served with fresh fruit and cheese.


1 (6 oz) can chunk light tuna packed in water, well-drained (can also use fresh or canned salmon)
1 cup cooked cannellini beans (if using canned, choose no-salt-added or low-sodium beans and rinse and drain well before use)
1/2 cup grape tomatoes, halved
1/2 medium red onion, thinly sliced
4 cups arugula (or mixed greens)
4 Tbsp. Denise's Everyday Dressing
2 cups berries (or melon or pineapple or grapes)
2 reduced-fat (or part-skim) cheese sticks


1. In a large bowl, combine the tuna, beans, tomatoes, and onion. Add the arugula and toss gently to mix.
2. Add the dressing and toss to coat evenly.
3. Divide the salad evenly between 2 serving plates. Serve 1 cup berries and 1 cheese stick with each portion.
