Walking Challenge Recipe: Garden Veggie Smoothie

This delicious smoothie is almost like drinking a gazpacho for breakfast. It offers up a generous servings of veggies, and when paired with hard boiled egg, is a great way to start the day or refuel after your walk!! Makes 2 servings.

Ingredients

1 large tomato, stem and leaves removed

¼ medium cucumber

¼ bell pepper (green, orange, red, yellow)

Small handful of parsley

2 tablespoons extra virgin olive oil

Squeeze of lemon juice

Dash of celery salt

Salt and pepper to taste

Pairing: 1 hard-boiled egg

Instructions

Blend first 5 ingredients until smooth; add lemon and salt and pepper to taste. Pair with a hard-boiled egg for a savory protein and veggie filled breakfast.
