Asian Chicken Burgers with Edamame and Slaw

Ingredients

3/4 lb. ground chicken or turkey (at least 90% lean)
2 Tbsp. gluten free bread crumbs
2 Tbsp. chopped cilantro
1 scallion, chopped
2 tsp. tamari or gluten free soy sauce
2 tsp. chili paste (such as sriracha)
1 tsp. toasted sesame oil
1 tsp. grated ginger
2 lime wedges (optional)
4 cups cole slaw mix (or shredded green cabbage)
4 Tbsp. Sesame Ginger Dressing
3 cups steamed edamame in the pod


Instructions

1. Preheat a grill or indoor grill pan over medium-high heat. Coat the grill with oil spray.
2. In a medium bowl, combine the turkey or chicken, bread crumbs, cilantro, scallion, soy sauce, chili paste, sesame oil, and ginger. Shape into 2 patties.
3. Grill the burgers for 4 to 5 minutes per side, or until fully cooked. Finish each burger with a squeeze of lime juice (if using).
4. In a medium bowl, thoroughly toss the cole slaw mix with the Sesame Ginger Dressing.
5. To serve, plate 1 burger with half the slaw and 1 1/2 cups steamed edamame.
