Denise, Vegetarian, Lactose Free
- 1 1/2 cups pineapple chunks – fresh or frozen
- 1 cup unsweetened pineapple juice
- 1 cup unsweetened coconut milk
- 1/4 cup ice
- Place the pineapple chunks and ice in the blender – they should go in first so they get the bulk of the pulverizing.
- Add the pineapple juice and coconut milk, and puree until smooth.
- I like to garnish with a fresh pineapple wedge – it’s such a festive and delicious drink!
