Asian Chicken Salad

Crunchy cabbage and sweet and smokey sesame ginger dressing make this delicious flavorful salad with chicken a healthy twist on a lunchtime favorite.


2 cups bagged coleslaw mix
1 cup thinly sliced romaine lettuce (or mixed greens)
6 oz. cooked skinless chicken breast, shredded or cubed (or shrimp, salmon, or tofu)
1/2 red bell pepper, thinly sliced
1/4 cup shelled edamame, cooked from frozen
2 scallions, thinly sliced
4 Tbsp. Sesame Ginger Dressing
1/4 cup chopped roasted peanuts (or almonds or cashews or sunflower seeds)
2 clementines (or tangerines)


1. In a large bowl combine the coleslaw mix, lettuce, chicken, red pepper, edamame, and scallion. Add the dressing and toss to coat evenly.
2. Divide the salad evenly between two plates and top each portion with 2 Tbsp. peanuts.
3. Serve each portion with 1 clementine (on the side or mixed into the salad).
