Colorful Veggie Omelet






Vegetarian, Diabetic, Gluten-Free, Lactose Free
Cheese, broccoli and bright bell peppers are combined in this delicious, healthy omelet, paired with a side of your favorite fresh fruit.


1 tsp. olive oil
1/2 cup chopped broccoli florets
1/2 bell pepper, thinly sliced
2 handfuls spinach (or kale) leaves
1 whole egg
2 egg whites
2 Tbsp. grated parmesan cheese (or nutritional yeast for dairy-free version)
1/2 grapefruit (or 1/2 cup grapes)


1. Heat the olive oil in a small skillet over medium heat.
2. Add the broccoli and peppers and cook until tender, about 5 minutes.
3. Add the spinach and cook until wilted.
4. In a bowl whisk together the egg and egg whites. Pour the eggs into the skillet.
5. Cook the omelet until set on one side. Flip the omelet and top with the parmesan cheese. Cook until the second side is set. Transfer the omelet to a plate.
6. Serve the grapefruit on the side.
