Denise's Spa Salad with Salmon

Fresh and fruity salmon salad that will make you feel like you're having an afternoon dining at the spa!


2 (6 oz) wild salmon fillet
5 tsp. olive oil, divided
1/4 tsp. black pepper
1/8 tsp. salt
4 cups arugula, watercress, or other preferred salad greens
2 kiwis, peeled and sliced
1/4 cup toasted walnuts
1 Tbsp. chopped fresh parsley
2 Tbsp. orange juice
1 tsp. chia seeds
1/2 tsp. Dijon mustard


1. Preheat the broiler. Line a baking sheet with foil or parchment.
2. Place the salmon fillets on the baking sheet. Rub the top of each fillet with 1 tsp. oil. Sprinkle with the pepper and salt.
3. Place the baking sheet in the oven, 4 inches from the broiler. Broil 7 to 10 minutes per inch of thickness.
4. Divide the salad greens, kiwi slices, and walnuts evenly between 2 plates. Top each salad with half of the cooked salmon (flaked or whole). Sprinkle 1/2 Tbsp. parsley over each salad.
5. In a small bowl, whisk together the orange juice, remaining 1 Tbsp. oil, chia, and mustard. Drizzle half of the dressing over each plate.
