Egg Salad on Watercress-GF

Vegetarian, Diabetic, Gluten-Free, Lactose Free
Delicious, healthy egg salad with Greek yogurt, onions and mayo served over fresh watercress and served with crackers and fruit.


3 hard-boiled eggs
3 hard-boiled egg whites
1/4 cup chopped onion and/or celery
3 Tbsp. organic canola mayo or Vegenaise (if following a gluten-free diet, check ingredients to ensure mayo is gluten-free)
Black pepper (to taste)
2 cups watercress (thick stalks removed)
2 servings gluten free crackers (for each serving, count out a portion equivalent to about 150 calories)
2 oranges (or kiwis or plums)


1. Chop the eggs and egg whites and mix with the onion/celery, mayo, and pepper.
2. Arrange 1 cup watercress on each serving plate. Top each portion with half the egg salad.
3. Serve each portion with 1 serving crackers and 1 orange.
