Fresh, soft sage leaves and goat cheese come together with finely chopped sun dried tomatoes to make up this delicious baked chicken dish that is served with a side of whole roasted cauliflower with fragrant caper vinaigrette.

Ingredients

2 small bone-in, skin-on chicken breasts
2 sage leaves
1 oz. goat cheese
1 Tbsp. finely chopped sun dried tomatoes
2 tsp. olive oil
1/4 tsp. black pepper
1/8 tsp. salt
1 recipe Whole Roasted Cauliflower with Caper Vinaigrette

Instructions

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or foil.
2. Place the chicken breasts on the baking sheet. Loosen the skin of the chicken breasts to make a pocket between the skin and the flesh. Place 1 sage leaf, 1 Tbsp. goat cheese, and 1/2 Tbsp. sun dried tomato under the skin of each chicken breast. Rub the outside skin with the oil and sprinkle with the pepper and salt.
3. Bake the chicken for about 50 minutes, or until it registers an internal temperature of 165°F. Allow the chicken to rest for 5 minutes at room temperature; remove the skin before serving. Plate 1 chicken breast with half the Whole Roasted Cauliflower with Caper Vinaigrette.
