Mushroom-Goat Cheese Burger with Salad

Thyme sauteed mushrooms and onions top a veggie burger spread with rich goat cheese, served with a side salad and fresh fruit.


2 tsp. olive oil
1/2 small onion, thinly sliced
1 cup sliced mushrooms
1/4 tsp. dried thyme
2 veggie burgers (or turkey burgers; if following a gluten-free diet, check the ingredients to ensure the burger is gluten-free)
1 oz. goat cheese
4 cups mixed greens (or preferred salad greens)
2 Tbsp. Denise's Everyday Dressing
2 pears (or apples or bananas or nectarines)


1. Heat the olive oil in a small skillet over medium heat.
2. Add the onion, mushrooms, and thyme and saute until the veggies are very tender, about 10 minutes. Add a splash of water or broth as necessary to keep the veggies from drying out.
3. Prepare the veggie burgers as directed on the package and place on 2 serving plates. Top each burger with 1/2 oz. goat cheese and half the mushroom-onion mixture.
4. Serve each burger with 2 cups greens drizzled with 1 Tbsp. dressing and 1 pear.
