Rich, warm soup that is packed with veggies and flavor is paired with a fresh, crisp cucumber and tomato soup.

Ingredients

2 servings Red Lentil Soup (4 cups)
1 medium cucumber, diced
2 medium tomatoes, diced
1/2 cup diced red onion
2 Tbsp. chopped cilantro
8 kalamata or green olives, chopped
1/3 cup feta cheese
2 Tbsp. olive oil
1 Tbsp. lemon juice
1/4 tsp. ground cumin

Instructions

1. Heat the soup.
2. In a large bowl, combine the cucumber, tomato, onion, cilantro, and olives. Sprinkle with the feta, oil, lemon juice, and cumin and toss well to combine the salad ingredients.
3. Serve 2 cups soup with half the cucumber-tomato salad.
