Whole grain bread is topped with turkey bacon, lettuce, tomatoes and fresh avocado then paired with crisp, fresh bell peppers and apple slices.


4 slices turkey bacon (if following a gluten-free diet, check the ingredients to ensure the turkey bacon is gluten-free)
4 slices whole-grain bread (use gluten-free bread if following a gluten-free diet)
1/2 ripe avocado, sliced
4 tomato slices
Lettuce leaves
Black pepper (to taste)
1 cup bell pepper strips
2 plums (or 2 kiwis or clementines or nectarines)


1. Cook the bacon according to package directions.
2. Toast the bread.
3. For each sandwich, layer 2 slices bacon, half the avocado, 2 tomato slices, and lettuce leaves between 2 slices of toast. Sprinkle the avocado and tomato with black pepper if desired.
4. Serve each sandwich with 1/2 cup bell pepper strips and 1 plum.
