Skinny Tuna Melt-GF

Savor this traditional tasting tuna melt but without the guilt!


1 (6 oz) can chunk light tuna packed in water, well-drained (can also use fresh or canned salmon)
1/4 cup minced onion and/or celery
2 Tbsp. organic gluten free canola mayo or Vegenaise
2 tsp. Dijon mustard
Black pepper (to taste)
4 slices gluten free bread
4 slices reduced-fat cheese (3/4 oz. each)
4 tomato slices
2 cups baby carrots


1. Preheat the broiler.
2. In a small bowl, mash together the tuna, onion and/or celery, mayo, mustard, and black pepper.
3. Toast the bread. Spread a thin layer of tuna salad on each of the 4 slices of toast. Top each slice with 1 slice of cheese.
4. Place the toast on a small baking sheet and broil 4"" to 6"" from the heat source for 2 to 3 minutes, or until the cheese melts.
5. Place 2 toasts on each serving plate and top with 1 slice tomato. Serve each melt with 1 cup baby carrots.
