Southwestern Veggie Burgers with Crunchy Jicama Salad

Spicy veggie burgers with fresh, ripe avocado are served with crunchy, zesty jicama and mango salad.


2 veggie burgers (or turkey burgers; if following a gluten-free diet, check the ingredients to ensure the burger is gluten-free)
2 Tbsp. salsa
1/4 ripe avocado
1 whole-grain bun (or 2 slices whole-grain bread; use gluten-free bun/bread if following a gluten-free diet)
Lettuce leaves
Red onion
1 recipe Jicama Salad


1. Prepare the burgers as directed on the package.
2. In a small bowl, mash together the salsa and avocado.
3. Place one bun half on each plate. Layer each bun with half the salsa mixture. Top with 1 burger, lettuce, and onion.
4. Serve each burger with half the Jicama Salad.
