This hearty salad combines crisp, fresh spinach and feta cheese with tangy, roasted red peppers and hard boiled eggs and is then topped with grilled chicken and Denise's favorite salad dressing.


4 to 6 cups baby spinach
10 oz. grilled skinless chicken breast, cut into thin strips
2 hard-boiled eggs (cage-free), sliced
2 hard-boiled egg whites, sliced
1/2 cup jarred roasted red peppers, drained and cut into thin slices
1/4 cup crumbled feta cheese
4 Tbsp. Denise's Everyday Dressing


1. Divide the spinach, sliced chicken, sliced eggs, roasted peppers, and cheese evenly between two plates.
2. Drizzle each salad with 2 Tbsp. dressing.
