Delicious pressed and baked tofu is combined with peanut butter, brown sugar, soy sauce and your favorite colorful veggies, then served with cauliflower rice.

Ingredients

1 recipe Baked Tofu (or 8 oz. cooked chicken breast or cooked shrimp)
2 Tbsp. creamy natural peanut butter (or cashew butter)
2 Tbsp. warm water
2 tsp. rice vinegar
2 tsp. tamari or gluten free soy sauce
1 tsp. brown sugar (or honey)
Pinch cayenne pepper (optional)
4 cups cauliflower florets (half a medium head)
1/2 cup gluten free, low-sodium vegetable broth
1 Tbsp. peanut, canola, grapeseed, or coconut oil
2 cloves garlic, minced
Pinch red pepper flakes
1/2 cup sliced onion
1 cup sugar snap peas
1 cup sliced red bell pepper
2 Tbsp. chopped fresh cilantro

Instructions

1. In a small bowl, whisk together the peanut butter, water, vinegar, soy sauce, brown sugar, and cayenne (if using). Set aside.
2. Pulse the cauliflower in a food processer until finely chopped (about the same size as rice grains). Or, you can grate the cauliflower with the large side of a box grater.
3. In a large saute pan, heat the broth over medium heat until just simmering. Add the cauliflower, cover the pan, and steam until the cauliflower is tender and the broth has evaporated, about 6 minutes. Divide the cauliflower between 2 plates.
4. Add the oil to the pan. Add the garlic and red pepper flakes and saute for 30 seconds.
5. Add the onion, sugar snap peas, and bell pepper. Cook for 5 to 7 minutes, stirring frequently, or until the veggies are tender-crisp.
6. Add the peanut sauce and Baked Tofu and toss with the veggies. Heat for 1 minute.
5. Scoop the veggie-tofu mixture over the cauliflower rice, dividing it evenly between the 2 plates.
