Greek yogurt and tuna fish mixed with diced onions, mayo and rice wine vinegar, wrapped in a pita with lettuce and tomatoes and served with a side of ripe grapes and crunchy almonds.


1 (6 oz) can chunk light tuna packed in water, well-drained (can also use fresh or canned salmon)
1/4 diced onion (or celery or preferred veggies)
2 Tbsp. gluten free organic canola mayo or Vegenaise
1 tsp. rice or white vinegar
2 gluten free pita pockets or 2 gluten free wraps
4 tomato slices
1 cup grapes
1/2 cup almonds


1. In a small bowl, mash together the tuna, onion, mayo, and vinegar.
2. Cut the pitas in half and place 2 halves on each serving plate. Fill each half with 1/4 of the tuna salad mixture, 1 slice tomato, and lettuce.
3. Serve each sandwich with 1/2 cup grapes and 1/4 cup almonds on the side.
