Update the traditional meatball Parmesan with some kale inside!

Ingredients

1 Tbsp. olive oil
1 to 2 cloves garlic, minced
6 oz. bag baby spinach leaves
2 servings Turkey-Kale Meatballs (10 meatballs with sauce), warmed
2 ounces (1/2 cup) shredded part-skim mozzarella cheese

Instructions

1. Heat the oil in a medium skillet over medium-high heat.
2. Add the garlic and saute for 30 to 60 seconds.
3. Add the spinach and cook until wilted, about 3 minutes.
4. Divide the spinach evenly between two plates. Top each portion with 5 meatballs (and sauce) and 1/4 cup cheese.
5. Microwave until the cheese is melted, about 30 seconds.
